Rob’s & Trish Curry Dip
1 cup mayonnaise
1 tsp horseradish
1/4 tsp curry
1 tsp tarragon vinegar
1 tsp minced dried onions
Mix all ingredients, chill. Serve raw vegetables.
Vegetable Dip I
1 10 oz. Frozen chopped spinach, thawedSqueeze spinach until dry. In medium bowl stir together spinach, sour cream, mayonnaise, soup mix, water chestnuts and green onions. Cover, refrigerate 2 hours. Stir before serving. Can serve with raw vegetables or crackers, or hollow our a round loaf of bread and pour dip inside loaf with bread crumbs around side for dipping. The whole loaf is to be torn apart as people eat it.
Vegetable dip II
1 Pint Sour CreamMix all ingredients with mixer on low speed. Refrigerate. Can use like vegetable dip above. (Will keep 2 weeks.)
Nacho Cheese Dip
Taco sauce mild or hot, your liking
Velveeta cheese
2 parts cheese to 1 part sauce; dice cheese, pour sauce over cheese; microwave or cook on stove in double boiler. Serve with plain nachos. Recipe is on Velveeta box if you want more info.
Schapiro’s Mexi- Chile Dip
1 Large tomato
1 4 oz can chopped green chiles
1 ½ TBL vinegar
3 TBL olive oil
1 medium onion
1 3 oz can chopped black olives
1 tsp garlic salt
Chop all vegetables, mix vinegar, garlic salt and olive oil and pour over vegetables. Great with nacho chips.
Pepper Jelly
1 ½ Cup bell pepper red or green
6 ½ Cup sugar
1 bottle Certo or 1 pkg Sure Jell
½ Cup hot peppers
1/1/2 Cup vinegar
Red or green food coloring
Grind or chop peppers, mix with sugar and vinegar, boil 5 minutes. Add Certo or Sure Jell. Add red or green food coloring to produce the color you want Boil 1 minute, remove from heat and let stand 5 minutes. Put in Jars and seal with paraffin. Serve with cream cheese and crackers - really southern. If it does not set up exactly right mix it with cream cheese just as good.
Meatballs
Frozen precooked meatballs
1 part Ketchup
1 part grape jelly
Mix jelly and ketchup and warm in microwave or on stove. Place frozen meatballs in crock pot and pour mixture on top and stir. Four to five hours later, you won't believe how good they are.
Bar-B-Que Weenies
Cut up hot dogs
1 part mustard
1 part grape jelly
Just like above, mix together warm and let the crock pot do the work. Do not have to cook as long.
Ham Delights
1 lb. Sliced ham
1 lb. American or Swiss cheese sliced
2 Tbl poppy seeds
1 small onion, finely chopped
1 Tbl Worcestershire sauce
2 sticks of butter
2 Tbl mustard
2 dozen small party buns
1" x 2"
Mix margarine and mustard till smooth. Add poppy seeds, onion, and Worcestershire sauce. Slice party buns in half and spread mixture on buns. Add ham and cheese. Heat in oven at 250 to 300 degree and serve hot. Are really good hot or cold but do cook.
Hot Artichoke Dip
1 large can artichoke hearts
1 cup mayonnaise
1 cup Parmesan cheese shredded
Drain artichokes and mash with fork. Combine mayo and cheese. Put in 9" x 13" baking dish. Bake at 350 for 15 to 20 minutes. Serve Hot and bubbly with triscuits. Good can serve in chafing dish
Cucumber Ring Supreme
(a real challenge but good)
1 3 oz. Pkg lemon flavored gelatin
3 Tbl lemon juice
1 Cup boiling water
3/4 Cup Water
1 cucumber, thinly sliced
Dissolve lemon-flavored gelatin in boiling water add the water and lemon juice. Pour into a deep 6 ½ cup ring mold. Chill till partially set. Arrange overlapping slices of cucumber in bottom. Press into gelatin. Chill till almost firm.
1 envelope unflavored gelatin
3/4 Cup water
1 8 oz cream cheese cubed and softened
2 Tbl sugar
3/4 tsp salt
1 Tbl lemon juice
Mix gelatin, sugar and salt in saucepan. Add water, stir over low heat until gelatin and sugar are dissolved. Stir in the lemon juice. Gradually beat hot gelatin mixture into softened cream cheese with rotary beater till mixture is smooth.
4 cucumbers
3 Tbl finely chopped onion
1 Cup mayonnaise
1/4 Cup snipped parsley
Pare and halve cucumbers lengthwise, remove seeds Grind or shred cucumbers and drain ( you should have about 1 ½ C) Add cucumber mayonnaise, onion and parsley to cream cheese mixture. Pour over almost firm gelatin mold. Chill till firm
To serve, unmold, and fill center of ring with cherry or grape tomatoes, if desired. Makes 8 to 10 servings. Worth the work!
Mexican 7-layer Dip
Place the following, in order bottom up, into a deep, wide casserole dish (not making the layers too thick):
Layer 1 Refried beans or Bean Dip (For extra zest: add a touch of
curry or your favorite Mexican spice, and mix.)
Layer 2 Chopped Onions
Layer 3 Sour Cream (Lite Sour Cream if you don't want it heavy)
Layer 4 Shredded Lettuce
Layer 5 Chunky Salsa (hot or mild)
Layer 6 Sliced Jalapenos
Layer 7 Shredded Sharp Cheddar Cheese
Garnish with a few Sliced Jalapenos.... and serve with substantial tortilla chips and/or king size corn chips!!! Yummmm....
